South West Ribs
Ribs
Marinade:
1/2cup Red wine
1/2cup Malt vinegar
1cup Honey
3 Tbsp Seeded mustard
2tsp Salt
1tsp Chilli – ground
2tsp Coriander – ground
1tsp Pepper – cracked
1tsp Thyme – rubbed
2Kg Pork Ribs – cut in half
Heat honey until warm add the wine &
vinegar and mix until smooth, add the rest of the ingredients and mix well
pour over the ribs and allow to marinade in the fridge for at least 8 hours
turning often. Remove the ribs from marinade and Bake@200C ~40 mins basting
with a little liquid. Whilst ribs are cooking reduce the marinade in a pan
until syrupy then coat the ribs with reduction when cooked.
Southern Style
Sauce :
1Tbsp Olive oil
1 Red onion – finely diced
1tsp Chilli – ground
4Tbsp Maple syrup
1shot Espresso coffee
¼ cup Red wine/White vinegar – mixed in equal quantities
1tin Watties Mexican tomatoes - 400g (can use plain chopped tinned tomatoes)
1nip Jim Beam Bourbon
Pepper & salt to taste
Sautee the onion
in the oil add the chilli cook until fragrant add the wine/vinegar mix &
maple syrup reduce slightly add the rest of the ingredients puree slightly
and simmer about 5 mins. Serve with the Ribs
