Best Ever Brownie
Makes ~24-36
Tray 600cmx450cm or 2trays 300cm225cm or halve the recipe
450g Butter
1150g Chocolate (dark/cooking)
340g Flour
225g Cocoa
8tsp Baking Powder
4tsp salt
24 Eggs
1800g Caster Sugar
8tsp Vanilla Essence
450g Sour Cream
Melt the Chocolate with the butter in the microwave on
med-low set aside. Sift together the Flour, Cocoa, Baking powder & salt set
aside. Place the eggs, sugar & vanilla essence in the mixer with a whisk
attachment and whisk to a sabayon…add the chocolate mixture and mix well
then mix in the flour then the sour cream. Pour into a greased & lined tray
and bake @ 170C ~ 40 minutes. Skewer comes out clean.
Allow
to cool and cut into squares ~9cm wrap individually in cling film & freeze.
